Friday today and that to me means ‘work day’. So the chef is not on shift till about 530pm and depending on how my week has panned out and how many balls have been juggled and dropped i may have something organised or i may not. When i mean having ‘something organised’ it is usually a freezer meal that can be defrosted and heated up pronto (and i must also mention that sometimes a wonderful mother may miraculously plant a meal in the fridge…love you mum xx)
Anyway, back to the freezer meal….
One freezer meal that i have had some success with in the past is soup. I LOVE this meal. Something i can easily make in the week, have for work lunches and have some on standby for dinner. However this ‘LOVE’ is not always appreciated by the kids. We used to have success with Tomato soup as well as Pumpkin soup but that now has narrowed to pumpkin soup only… and enjoyed by only one child. Last week i tried a Bill Granger recipe for sweet corn and potato chowder which basically worked out to be a formula of –
corn + potato + onion + stock = not many excited faces peering at me over the bowl
So the question i have to you is what soups have you had success with? I would love to have a larger repertoire of soup meals that the kids would enjoy, even if it means all they do is dip a few toast fingers in and manage to ‘try’ it.
Do your people in the house like them blended smooth or hearty and chunky?
Anyway, another work day tomorrow so the husband (aka stand in chef) on call for tomorrow nights dinner (He busting to share his spaghetti bolognese recipe but i don’t think i will let him lose on the blog yet).
